What is FREEZE DRYING?

FREEZE DRYING is the process of dehydrating foods under a vacuum which have been frozen by liquid nitrogen or other means. The moisture content changes directly from a solid to a gaseous form without having to undergo the intermediate liquid state through sublimation. This process, the product maintains its original size and shape with a minimum of cell rupture, which prevents oxidation of the product. Freeze dried products will maintain their nutrients, color, flavor, and texture often undistinguishable from the original product.
